Loved the peanut butter in this. My kids who don't usually like my pad thai, ate third helpings of this one. We used tofu. I cooked it separately, then all veggies together - subbing half of the pepper amount with matchstick carrots. Then pulled everything back together with the sauce. I also subbed udon noodles, and they held up better than the rice typically do for me. Multiplied this out for 8 servings.
