Made this for breakfast this morning for Hubs and I, and made it vegetarian. Added an extra cup of spinach, used two smaller potatoes and one more egg (Hubs likes 2 eggs). Very tasty, will definitely make it again. Note of caution, I microwaved the potatoes for 6 minutes on the potato setting instead of the 4 minutes suggested in the directions, and the potatoes were a little over ‘baked’.
