This was soooo delicious! I am allergic to zucchini so almost passed this by! But I needed a recipe for my baby potatoes and baby carrots and this was scrumptious! So, minus the zucchini, I made the recipe as directed. I used my toaster oven on convection setting and everything cooked to perfection! After the first 20 minutes, I added just the minced garlic and put it back in for the remaining 20 minutes.
I meal prep for the week and every time I reheated a batch for dinner, it was as divinely delicious as the last. I paired with grill seared salmon. Will be making this a staple!
