Need to stuff onions in jar to avoid making a lot of brine. Added a clove of garlic to each jar for some pizzazz. Easy to modify amount, too: I made a small batch in a smaller mason jar. I stuffed 1/2 onion (cut up) in the jar, filled it with water to see how much brine I'd need. Dumped the water and adjusted the ingredient amounts to make just the right amount. My other 1 quart jar has pickled eggs in it...I guess I need more jars!
