Yum 😋 used light coconut milk so not as rich or creamy as it would be with full fat. Next time I will remove all the chickpeas after toasting and put back in at the end - they went a bit mushy with the coconut milk. Really good though! The halloumi is a bit of a strange addition, doesn't feel like it really fits with the dish... but to be honest on reflection there isn't much in life that wouldn't be improved with the addition of halloumi so it works for me 🤣
