Awesome recipe! Super light and fluffy pancakes. I made them vegan by skipping the egg and adding an extra 1/4 cup of plant based milk 😊 the first time making this I followed the recipe’s directions and used 3 tsps of baking powder but I could taste it in the cooked pancake, so I reduced it to 2 tsps the next time and it was much better! These pancakes are great to play around with for different flavors. I love to add cinnamon and vanilla. You could add peanut butter, pumpkin purée, and even cocoa powder! Lots of options here, and I like options.
