It looks delicious Jess! Mine didn’t break down so easily as yours, and for sure the reason is I didn’t use rice flour, instead I used a mixture of brown GF flour with oat flour and a bit of almond flour. Not sure you would want to try that since mine didn’t bake very well in the centre after 1h in the oven so maybe is not the correct combination but the taste was super!
