I substituted corn and black beans for a lot of the veggies in this, but I loved it! my family wasn't as thrilled, so I don't think it will be a repeat, as it took a lot longer than their preferred Lipton "Spanish Rice". but I will keep it bookmarked for future use for nights when I have lots of time to make fajitas!
