The instructions tell you to add "vegetables of your choice". I think the mention of carrots and potatoes was primarily because those are the most typical vegetables for a stew. There also aren't amounts for the sofrito or the seasoning. That's actually something that attracted me to this recipe - you can come to your own balance. I tend to use more vegetables than many people, but you could also make this more of a ragù. It's up to you.
