Instructions

Step 1
Wash your chicken tenderloins with vinegar and lime. Cut each tenderloin in half and add in your seasonings and sofrito. let it marinade for at least 2 hours.
Step 2
Once the chicken is done marinating you will heat the stove to medium and add in olive oil and sugar to the pot. Once sugar is caramelized you will add your tenderloin pieces . Once they have browned you will Add in 1-2 cups of water (I just add water to the same bowl the seasoned chicken was in) and simmer for 15-20 minutes. (Make sure the tenderloins don't dry up)
Step 3
Once the tenderloin pieces are cooked through, you will then add 2-3 tablespoons of tomato paste, cilantro ,and veggies of your choice. Stir the mixture well, close the lid, lower the heat to medium low and cook for about 30 minutes .
Step 4
Serve with white rice, avocado slices and sweet plantains 🤎
