Our FAVORITE muffins. I like to add citrus zest & juice to the lentil purée, add a heaping cup or two of spinach (I grind the spinach in my food processor with the oats to make oat flour first and so you can’t taste the spinach and can hardly tell it’s there other than the muffins having a greenish hue.) I also add about 2 teaspoons of vanilla Greek yogurt. And I used applesauce instead of oil.
