You can bake without a pot on a preheated baking tray, but you'll need to add steam to oven (trays in oven with boiling water poured into them) and reduce oven temp to 230C/445F. The steamy environment allows the bread to rise properly. The steam trays can be removed after 25 mins. You can also use an upside down ovenproof pot inverted over the bread on a baking tray. a sort of makeshift dutch oven. Preheat the baking tray and pot first!

Hi! I've been making sourdough for a while and only ever used one of the enamle roasting pans. The blue or black ones with the white specs on the pan and lid. You can get them at Walmart for I believe under $20
