This was really good! I will make this again.
I cooked it in a Dutch oven on the stove because my instant pot is still in the unopened box and I used instant rice. It took about 30 minutes. I doubled the rice, beans, and did a full container of broth (roughly 4 cups) because we have a teen son that needs more filler. I increased the amounts of the spices. Served with a spoon of guac and sour cream, and fresh diced tomato on top.
