This is a terrible waffle recipe. Unless it is tweaked you’ll wind up with the picture I’ve posted. I had to use a batter scoop to fill my waffle maker and the batter doesn’t spread. They may look undercooked, but the ones I left in a hair longer turned into hard hockey pucks. The ones I cooked here were very dense and bland. The recipe was followed to the letter, using my sourdough discard, which is half whole wheat and half bread flour. Maybe an AP starter would work better. I make bread and other discard recipes and they all turn out fine. This one was a definite miss. I’ll stick to my NY Times waffle recipe.
