Copycat Frontega Chicken Panini 🤤 I used to work at Panera and this is one of my favorite things to order from there. Here’s how to make it at home:

4 slices of bread (we used sourdough but it’s normally made with focaccia)
8oz shredded chicken breast (you can use rotisserie or slow cook a chicken breast in chicken stock and shred)
4oz mozzarella cheese, sliced
1 tomato, sliced
1oz red onion, thinly sliced
2 tbsp torn basil
1/4 cup mayo
1 chipotle in adobe, finely chopped
1 tsp adobo sauce
Salt and pepper

1. Combine mayo, chipotle and adobo sauce and mix.
2. Spread 1 tbsp of chipotle mayo on each piece of bread.
3. Top one piece of bread with mozzarella, onion, tomato slices, basil, chicken, salt and pepper. Top with other slice of bread.
4. Grill sandwich in panini press for 5 minutes, or until golden or in a pan over medium heat, 3-4 minutes each side, or until golden and cheese has melted.
Serves 2.
