Made this tonight and we all enjoyed it. Found that I had to simmer the sauce a bit longer to thicken it but it could be the tomatoes I used. I did one tin of black beans and one cup of frozen sweetcorn to give it a bit more variety. Then I used two cups of cheese, one lighter and one regular mature cheddar and found this was enough. I served it with griddled chicken for meat eaters in my house but I enjoyed it on its own with some salad leaves. One to make again!
