This dish gives you a very simple and quick way to get a lot of green veggies in! For “seasoning” I used some homemade pesto we had from our basil harvest over the summer and added some vegetarian Italian-style sausage for a little protein. The kiddos loved it! I added more oil for roasting and more pasta water to get the consistency of the sauce to be a bit more creamy.
