What I did was I heated the oil to near smoking point, turn down the heat to low, and add sugar, and dissolve it very slowly. It will take some time to dissolve the sugar.

I've tried the recipe again recently and I still couldn't get the sugar to dissolve. However! Once I added the pork to the sugar and oil, the sugar dissolved and the pork caramelized like it was supposed to. Will have to give your method a try though
