in Pickled Beet Salad with Chickpea Mash Recipe

Make sure to add enough salt to the chickpeas, they take a lot more than you'd think, but once I'd done that this made a great low cal lunch for am IF fast day. I subbed in a garlic and chilli extra virgin rapeseed oil for the drizzle and it really helped emphasis the garlic in the mash and contrast the acidity of the pickle.
