Colourful, very tasty, low fat, and packed chock-full of veggies. I used tinned cannelini beans because I was out of chickpeas, but they were fine. Roasting the veg is great to bring out their flavour, but after roasting the sausages I tipped everything into a saucepan to complete the dish in only 20 minutes and it was fine. I served with rice but I think creamy mashed potatoes would have been nicer.
