Changes I make:
In the sauce I sometimes just use 1.5 pounds of ground beef instead of sausage and beef. I don't think the sauce needs a full two pounds of meat ... and I like saucey sauce, not meaty sauce
In the "ricotta cheese" mixture, I also add cottage cheese and shredded Parmesan cheese
I definitely use fresh mozzarella sliced instead of shredded but you could use like half fresh, half shredded because the fresh is way more expensive.
The sauce takes some time (I normally make it the day before and let it sit) but it's so worth it. Definitely makes the whole thing so good.
