This was AMAZING! It’s definitely going to become one of my weeknight staples. It was easy to make and so delicious. It’s rich, yet light, filling but not heavy. One critique may be that it was a bit salty which I think had to do with the green curry paste, but next time I’ll try to refrain from adding the additional salt into it. A wonderful vegetarian (and possible vegan if you use vegetable broth) meal that’s healthy and nutritious.
