I dont like spicy foods, so I skipped the hot ingredients. I followed the comments recommendations and cooked the potatoes first to soften them up (after sautéing the garlic and onions). I threw in oregano, parsley, and thyme to taste.
A little more than 30 minutes prep-to-table but still easy.
