Very yummy. I think the home made enchilada sauce was what made it. For the enchilada sauce I used a 700ml bottle of passata and 1 1/2 the other ingredients to compensate for the extra liquid. Left out the nasty coriander at all points of the recipe and I don’t feel there was any lack of flavour as a consequence. Also left out the chilli powder as I feel the chipotle’s added enough spice! Definitely make again.
