So yes it takes like 8-10 hours to make and that means you need to start cooking at like 7 or 8am. Yes that means cooking onions for, or before, breakfast. But man oh man this is the stuff. Nice tomato broth, more veggies than you'd imagine, it's just a lovely soup. Pretty easy too. And a big shaving or dusting of parmesan is perfect. Serve with crunchy toast or a nice toasted sammich.
Versatile too. This soup will take so many different veggies. I will shuffle in yellow squash with the zucchini, or green beans (fresh go in with the zucchini, canned or frozen go in in the last 5 minutes or so), you could sub out cabbage for the chard, potato chunks for the pasta, so many different ways to take this.
