My husband and I enjoyed this. I was worried he wouldn't like it because he doesn't care for vegan meals, but he ate two servings and said he's excited for leftovers (if you're only feeding two people, you'll have leftovers) We decided there was a little too much lemon juice in the recipe, so we might use less next time. We also substituted parmesan cheese for the nutritional yeast, and it worked great. If you're worried about it being bland, I think the cheese helps, and add some salt. Sauce only took 2 minutes to make. The most work you'll have to do is chop the veggies and grill them. All together, great meal! Excited to have a healthy recipe.
