Delicious! A dipping sauce is absolutely necessary! And if it’s your first time working with rice paper, SERIOUSLY only soak them for 5 seconds- they might still be weird to fold with or not want to stay closed right away, but they WILL soften and turn beautifully sticky after 30 more seconds! Wrap while you can! P.s. they store beautifully in the fridge pre-made but not yet fried
