After I put oil in the pot I added thyme, rosemary, celery seed, cinnamon, and red pepper flakes and let it sit for about a min before adding in the garlic and onions. I also sauteed the carrots and celery at the same time. I removed them from the pot before adding the 2lbs of chicken to brown. After browning the chicken I removed them and then added the zest of one lemon and then splashed some of the chicken broth in the bottom of the pan to deglaze it before adding the rest of the broth and the previously sauteed aromatics and chicken. I added the juice of a whole lemon instead of a half, added some chicken bouillon to taste, and a little garlic powder.
