While it does say to use unsweetened coconut milk, I highly advise adding back in sugar to taste to enhance the coconut flavour. My advice does counter the ingredient, but having unsweetned coconut milk is much better in general because it lets you adjust your own sweetness (just like with unsalted butter - better to have it unsalted so you can season to your own taste instead of over salting).

Adding sugar to this recipe unfortunately makes it no longer diabetic-friendly

could possibly use a sugar substitute (monkfruit sugar, more honey, whatever sweetener you can use to your limits if possible)! but maybe try coconut cream instead of milk! its of course creamier but also has a more pronounced flavour!

Your pancreas doesn't discriminate between sugar (honey is sugar) and sugar substitute when it comes to insulin production. In fact, sugar substitutes are more harmful than sugar in a variety of ways. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3198517/

I mean while that is true, I'm only putting out advice outside of knowing any of your personal health histories. And I've known diabetics who sometimes use sugar substitutes or use sugar quite sparingly, so this was also based off of my own experience (but I'm also not trying to discredit what your husband's diet is). It was just a suggestion so take it how you want to accordingly when cooking I guess. Sorry.
