Came out great. I added a little bit more feta cheese and a splash more of red wine vinegar, olive oil, and lemon juice. I did use double the amount of pasta, mainly because I was lazy and didn’t want to have half of a box of pasta left that would probably go stale, along with calculating exactly half of the box, so I just made it all. :) I also sautéed the chicken with minced garlic, using slightly over one pound of chicken breast. Midway through preparing I realized I was out of cucumbers but it still came out really good. Also forgot to add salt and pepper when I mixed it all together but I didn’t really notice and no one complained! Next time I will make sure I have cucumber on hand and add some salt and pepper. This is a very good meal to make ahead as well. Fed myself and 2 teenagers with plenty of leftovers! Prep time was a little bit longer but that is probably due to my tiny kitchen and having to move things around, not to mention my somewhat newbie cooking skills! Will definitely make again!
