I threw everything except the lemon and feta into an instant pot/pressure cooker and put it on manual, high, for 15 minutes. Wow. So delicious. I upped the salt to 1/2 teaspoon and added more semi-sun dried tomatoes. I didn’t have kalamata olives so used sliced black olives instead. Served with a (big) sprinkle of feta cheese and sliced lemon. So easy and quick. Will definitely make again..
