Wouldn't recommend as a dip (there's nothing to bind it so would likely just be a frustrating mess), but as a side it's fantastic - tex-mex bean salad! No need to make the dressing separately, just throw it all in the bowl and give it a good mix. I also froze it without the tomato/avocado (added fresh when ready to use) and it was just as delicious after thawing.
