What an awesomely simple dish with an amazing flavor! I didn't salt & pepper the onions and mushrooms, just a little salt inside the peppers once they came out from the initial roasting. Crisscrossed 2 slices of pepperjack cheese on top and it was enough to make the natural flavors pop.
Definitely making this one again!
