I also am trying to limit my meat. But did you add anything to make up for the protein? Per cup, cauliflower has a little over 2 grams of protein, but chicken breast has 43 grams. Taste aside, you are essentially making an entree into a side dish.

I don't really worry about protein. It's in everything! I was vegan for 10 years and still rocked it. Just eat whole foods often and you'll be good. You could add mushrooms to it as well! That would be tasty.

Protein is absolutely not in everything. Protein and B12 are the things that vegans have to be cognizant of, although a vegan diet is very doable. Soy has a complete protein, and combining legumes and grains gets you there easily as well. But cruciferous vegetables aren't that high and cauliflower is not as good as brocoli raab or Brussel sprouts. I only need about 20% of the daily protein allowance to consider something a vegan entry, but that's still at least 9 or 10 grams of protein for most people per entree.
