Very tasty!! Made it just for myself and guessed most quantities. I also added chopped walnuts and dry herbs instead of fresh and it still came out amazing. Has a real warmth to it and is packed full of goodness! Also had some left over butter beans I added to bulk it out. I didn't have any shallots but onion worked just as well. The quinoa did take a little longer (about 20-25 mins) but that was fine. I had it on a low simmer. Totally worth the wait!
