One-dish
Good base recipe. Had to make a lot of changes for what was available in the US, plus upping the spices. Swapped the chorizo for andouille as the Mexican chorizo we have is not the same. Also use stewed tomatoes for smaller pieces as our plum/whole tomatoes are too big. Also needed way more liquid, not sure if my measurements were off when I did it by weight so I just measure out the rice/liquid my usual way now.

Yes I always used chopped tomatoes. I agree with the liquid. I mix this up and use chicken and prawns, also add sweetcorn and peas
