Used tomato, red onion, zucchini, parsley, and roasted red peppers as the vegetables and added two extra garlic cloves to the dressing and blended the dressing mix with my immersion blender instead of dicing the garlic and mixing it all manually (also eyeballed the salt to the point that I probably added slightly more than suggested, I always salt to taste) but otherwise followed the recipe exactly and this turned out beautifully.
