To me, the whole purpose of the IP is to make large batches of food. When I saw the small amount of lentils she used in the original recipe, I decided to double the amount of lentils and water and added 4 potatoes. Also, after depressurizing, I added some frozen peas (didn't have fresh spinach).
If I were to make this again, I would not use celery, only carrots. Celery gives me 'soupy vibes' and I don't like the combination of celery with coconut milk. I would also use veggie broth instead of water. After tasting it and adding quite some extra salt, garam masala and cumin, I still had the feeling it was missing something. Lastly, I would add more tomato paste.
