I was very surprised how lovely this turned out. I’d never heard about ‘massaging kale’ and I’d never really thought of eating kale raw. However, this recipe was absolutely delicious, the kale still had a bite to it which I quite like. It’s also very healthy, because the kale is not cooked at all. I was also surprised when it said to add Parmesan on top, but it definitely worked. I also used limes instead of lemons as I had no lemons, couldn’t taste much of a difference.
