Potatoes took a long time but I was using a deep sautéing pan, not a cast iron. I used dry thyme and just eyeballed it. Same with salt and pepper throughout the recipe. After reading other reviews and their tweaks, I included approx. 1/3 cup diced red onion, 1/2 red and 1/2 orange bell peppers, extra potatoes (used russet), and for the meat I used 1lb. Chuck tender steak. Used 3 TBSP soy sauce, since I had added extra ingredients. And closer to 3 TBSP of butter bc butter is love and it’s actually a healthy fat. We enjoyed it. It was also nice only needing one pan. I will be making this again!
