Recipe was good, but I cooked it differently. I added everything except the rice. This way the veg and chicken (which take longer to cook than the rice) can be mostly cooked prior to adding the rice. When I pull the chicken out to chop, I then add the rice. Once I add the chicken back to the soup, the rice is nearly finished. When I serve the soup, the rice is just cooked through and not mushy. I also added half a bag of frozen peas. Also, I wait to add the lemon to be sure the flavor is balanced. One time I made this, I already had cooked chicken in the freezer so I chose to add a can of cream of chicken soup. You can also use chicken bone broth or better than bouillon.
