My wife ate a double serving, and I literally licked the pot on this one. It was fantastic and is now in our regular rotation.
1. I omit celery from the mirapoix due to allergies, but it was still great. If anyone has a substitute suggestion, I'm all ears. Eyes? Whatever.
2. Make sure you REALLY blend them cashews. I used a Ninja and thought I had it smooth, but after cooking it was a touch nutty still.
3. I did not have leftover chicken, so baked chicken breast ahead of time. Vegetable spray both sides, layer of salt/pepper to taste, bake at 425 for 18-20, then rest for 5 minimum and dice. Add at last 5 minutes of simmer or with peas depending on how much the chicken cooled. It was perfect.
