Turned out quite well! It was also very good leftover. We used more than 7 small tortillas (maybe 12?) to fill our cast iron, and there was still extra filling. Fair warning this recipe uses a lot of dishes, 4 bowls and 4 pans as written. We were able to cut it down to 3 and 3, if you use the same pan for the corn, squash, and beans (just do them one at a time), and make the corn elotes in the same bowl while the enchiladas cook. It also took over an hour of very hands on cooking, so it is a time commitment.
