I have an 8 qt IP. I doubled the rice, added 4 cups of chicken broth, did not rinse my rice, and layered my IP as such: saute onion/garlic/seasonings lightly, add other veggies, seasoned chicken breasts, Rotel, and rice on top. The rice was perfectly cooked, dish was a little soup-y, but I just removed the lid and set it to saute to let some of it evaporated
