Changed most of this recipe based on comments. Ended up cooking the pasta separately in a pan. Cooked the chicken in butter and added garlic, then wilted spinach in the same pan. Removed all once cooked and added half a mushroom stock cube, some water, 2 tbsp of pesto, and 2 tbsp of cream cheese. Cooked until reduced and thickened slightly then added the chicken and spinach back in. Then mixed in the drained pasta.
This was really nice and flavourful.
