It turned out really tasty. The venison was over cooked, but that was my fault. I would do it again with venison, or something else that is lower fat than pork belly, but i would sear them quickly and slice them very thin. Then i would add some soy sauce, vinegar and brown sugar in with the mushrooms.
Also, i tried oyster mushrooms this time, and i think i prefer them to the shitake mushrooms.
