Ramen is easily one of my favourite meals and it's perfect for this time of year.

Instructions
Step 1
Begin with slicing the pork strips in half and roughly chop the onion, ginger, spring onions and peel the garlic. Place in a sauce pan, add the peppercorns and fill with water and until fully submersed. Put onto boil and let it gently simmer of 2 & 1/2 hours.
Step 2
Thinly slice the second bunch of spring onions, along with the mushrooms and remaining 4 cloves of garlic. Get a pan on a high heat, add oil and go in with the spring onions. Sweat down for a couple of minutes and then add the garlic and mushrooms. Cook for a further 3 minutes and then add the ramen paste. Stir and add 1 litre of boiling water. Leave to simmer
Step 3
Drain the pork belly and slice into 1 inch cubes. Get a pan on a medium-high heat and sear on both sides. Then add the soy sauce, vinegar and brown sugar. Leave to simmer on a low heat for 30 minutes
Step 4
Meanwhile soft boil the eggs (roughly 6 minutes depending on size)
Step 5
Then put the noodles onto boil, then drain when cooked and run under cold water.
Step 6
Add the noodles to a bowl, pour over the broth and then add the pork, eggs and garnish with some spring onions and mushrooms.
