I hadn’t made potatoes for breakfast in years so I decided to give it a go, only to be reminded why I never make potatoes for breakfast. I have no idea how people cook their potatoes in 30 min because every time I do, it takes me at least an hour. It’s the sole reason why I probably won’t make this for another 3 years. Other than that, it tasted great with a few tweaks!
A few pointers:
- Season your potatoes with more than just salt and pepper or they’re gonna be bland. I used garlic, onion powder and the ‘No salt seasoning’ from Costco that’s a blend of 21 spices. As well as the recommended fresh sage.
- Dice your potatoes as small as possible so they don’t take forever to cook.
- Follow the instructions in regards to cutting the peppers. Leave big chunks. I cut them too small and couldn’t taste them at all. I substituted the padrón peppers for shishito.
If anybody has any tricks on how to cook the potatoes faster, please let me know 🥲 The onions ended up burning from cooking them for so long after adding the potatoes.
It does make great leftovers, I have to say. I doubled the recipe since I was gonna spend an hour cooking anyway and then reheated the potatoes in the pan with fresh eggs the next morning.
