Really easy and good! Great for meal prepping. Followed the recipe with 12 eggs but after that I mixed combinations. I chopped up red & green peppers, onion & mushrooms. I beat the eggs, added s&p, garlic powder & parsley. Poured into muffin tins a little over halfway. I then added the vegetables and topped with a pinch of cheddar cheese. Baked at 350 for 20 minutes. They popped up out of the pan but sank back down once cooled.
