I love this potato salad!
After cooking the bacon, I pour the bacon grease into a measuring cup and then cooked the diced onion in the remaining pan drippings to take the raw edge off. Keep the sauce on low heat because I did start to get a bit of "scrambled eggs" when heating everything up.
